Marinate chicken for 24 hours with Spur Tree Jerk Seasoning preferably under skin. Prepare your grill. Charcoal or gas will work just fine. Have meat thermometer handy.
Soak chips & leaves in water 20 min. Wrap HANDFUL of chips in foil, poke small holes for smoke to escape. Wood / smoke is STRONG – a little goes a long way!!
Place tinfoil with chips directly on coals, gas burner or you can use a smoker box. Leaves can be put in a pan of water over heat.
Cook OFFSET (meat one side, charcoal other) 275 for 2.5 to 3 hours. Let ‘er smoke! Add another hand full of chips after 2 hours.
Cook until juices run clear, internal chicken temp hits 165 degrees on meat thermometer. ENJOY!
